This naturally clear wine was fermented from Delta Blackberries and Blackberry honey. Starting acid: diluted with water to .65 (all natural acid). Fermented to dryness, re-sugared to medium sweetness (by taste). Glycerin was used to give a thicker feel.

Tasting notes: Dark ruby color. Flavor very full and intense, smooth and nice. Negatives: flavor seems to become more thin the more you drink it. Using more flavorful berries would help the bouquet, which is somewhat flat. Excellent wine overall.

Production notes:
Macerated fermentation, aged in glass with oak chips.

Tasting notes: Very nice and clear color, berry/fruit flavors, but wine is uncharacteristic of the varietal with a peculiar unbalanced flavor.

Tasting notes: Tannic, fruit & berry flavors. Some volatile acids that blow off with swirling. Good well-balanced wine with wood accents, should get better with aging.

Tasting notes: Beautiful rose red color, good served cold. Wine is well-liked by most, but some tasters (including myself) are bothered substantially by harsh acid/sulfur smells/tastes. This arises from the natural fruit acids and skin bitterness. Solution is to use a different plum.
